Colombia Cauca
Our Colombia single origin coffee is sourced from the Cauca region, and sits at an elevation of 1,400-2000 masl. It boasts a blend of the Castillo, Caturra, and Colombian coffee varieties. In Colombia, Washed coffees are widely renowned. Although processing methods may vary slightly depending on the farm or association, the coffee is typically picked when fully ripe, pulped on the same day, and left to ferment in open-air tanks or buckets for 12-36 hours. After being washed to remove the mucilage, the coffee is dried on patios, in parabolic dryers, solar driers, or through a mechanical process. Some Washed coffees in Colombia are mechanically demucilaged. Excelso grade coffees from Colombia have a screen size of 15+ and can come from any of the country's main growing regions.
